Danish Delights: Flødeboller

This is NOT a 10 minute treat. Not by a longshot. But oh my G does it hit the spot after 2-3 hours of messing about in the kitchen. While it may not be a beginner’s recipe, it’s not as hard as one might think. The only problem is the chocolate, but come on, when has chocolate ever really been a problem?

Lemon and Meringue Dessert

As fond as I am of innovation and progress in the kitchen, there are times when I’m just as pleased to rearrange a classic from the repertoire. A while back T and I went all in to dish up a three-course menu for my cousin and her husband. Since I remembered that she’s a fan of lemon curd and T is too, I thought I’d remix some old staples, inspired by a marvelous lemon-and-meringue-blob of a dessert we once had at Restaurant Marv & Ben. Well that and a dash of laziness. It was prepared in advance and only took about two showy minutes to plate (everyone loves the promising flame of a crème brûlée torch).

Toasted Coconut Marshmallows: Sweets with an Aussie Twist

I love flødeboller, I love chocolate mousse, I looove chocolate macaroons. Basically I just love anything that requires beating egg whites. That’s one of the reasons I can’t get enough of making marshmallows. Another reason is that I have finally figured out why my last couple of batches turned moist and sticky in no time: I left out the 24 hours of air-drying. Silly billy! Now that I know, I just had to make my own version of a brilliant sweet I tried in Tasmania last October: The Toasted Coconut Marshmallow.
