Semi-Dried Tomatoes

Summer is slowly returning to whatever cave it crawled out of and is leaving human kind (or perhaps just me) mildly depressed. But apart from that, I’ve just had the first day of doing-nothing in about umpteen years, resulting in a creative outburst in the kitchen. Parsnip Soufflé – Yay!

Why hello autumn – who the hell invited you here? I for sure am not ready to greet you and your earthy colours welcome just yet. Although that’s not very PC, I know. We’re all supposed to be “can’t-wait-to-go-for-long-walks-wearing-my-perfect-vintage-sweater”. Nope, not quite there yet. I’m still in total denial of the fact that there’ll be no more strawberry-picking for little old me this year. But seeing as it IS an inevitable fact, we’d better get the most out of it, right? That’s why I think it’s time for some parsnip soufflé.

Hunting Greens in Dyrehaven

Admittedly these two pictures aren’t related in the way A & B or McDonald’s & self-loathing are, but still. They’re both results of yet another great episode of River Cottage, where Hugh Fearnley and his buddies went around their shire (or something else British) to gather goods for their dinner. Among other finds, they returned with some humongous oysters and a large bag of nettles that ended up in a pasta. Hence picture no. 2 above. That’s the result of our own little hunting trip in Dyrehaven north of Copenhagen about three weeks ago.

Beetroot Gnocchi

Well howdy partner! Boy are you in for a treat today. This is one of those experiments that paid off straight away, and mind you, I could fill a book with my less fortunate trial-and-errors. This is my spin on a recipe for pumpkin gnocchi from Delicious:Days. It looked so juicy that I had to wipe off the drool from my keyboard after reading it.
